orange chocolate muffins

Recipe: Light orange chocolate muffins

Ingredients:

  • 1 egg
  • 3 egg yolks
  • ½ tablespoon sugar
  • 2 ½ cups (300g) flour
  • 1/2 cup cassava starch
  • 2 tablespoons bitter cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon bicarbonate of soda
  • pinch of salt
  • finely grated rind of 3 oranges
  • juice of 3 oranges
  • 1/2 cup (125ml) vegetable oil
  • 2 tablespoons artificial liquid sweetener
  • 3 egg whites
  • ½ tablespoon sugar

Instructions:

  1. Beat egg, egg yolks and ½ tablespoon sugar with electric mixer for 7 minutes. Set aside
  2. Sift flour, cassava starch, baking powder, bicarbonate of soda, cocoa powder and salt. Fold in orange juice, vegetable oil, orange rind and sweetener
  3. Beat egg whites and ½ tablespoon sugar until firm. Beat in egg mixture. Keep beating for 6-7 minutes
  4. Spoon mixture into slightly oiled muffin tins up to 2/3 of their height. Bake in a cool oven until well cooked.
