Recipe: Open-face rice cake sandwiches
*Spread a thin layer of guacamole on a rice cake (I like the toasted sesame variety), add a slice of turkey breast, then a layer of roasted red peppers, and then another slice of turkey breast. Spread extra guacamole on top as desired. Delicious!
*Cut half an avocado into thin slices. Place half of the slices (one-fourth of an avocado’s worth) on a rice cake (again I like the sesame seed variety). Add some sliced purple/red onion, followed by roasted red peppers. Top with kosher salt and fresh-ground pepper to taste. Yum!
*I use the food processor to make this, but you can mash it all together by hand if you prefer. This recipe makes about 1 1/3 cups of guacamole, so each 1/3 cup contains about 15 g of fat, 2.5 g of which are saturated fat.
1.Put the onion and garlic in the food processor and chop them fine.
2.Slice the avocadoes in half, remove the pits, and peel off the outer rind.
3.Add the avocadoes, lemon juice, and spices, and blend all the ingredients together until smooth and creamy.
