Recipe: Pumpkin, kumara and nut soup

Ingredients :

  • 1 large onion – chopped.
  • 2 cloves garlic – minced.
  • 2 tablespoons olive oil.
  • 1/4 tsp chili powder.
  • 250 grams cubed pumpkin.
  • 1/2 tsp curry powder.
  • 1/2 tsp crushed coriander.
  • 1/2 tsp salt, 4 cups chicken stock.
  • 1 large kumara – cubed.
  • 2 tsp almond butter.

Instructions :

  1. Cook onion and garlic gently in oil. Add all remaining ingredients and cook until soft. Puree in food processor.
  2. Garnish with parsley or crushed nuts.

Number of servings (yield): 2
