Recipe: Garlic & Chilli Prawns with Linguine


  • 200g (6-8 oz)rice pasta linguine or spaghetti
  • Salt and ground black pepper, 200g (6-8 oz) large prawns
  • 3 large garlic cloves
  • 1/2 to 3/4 tsp minced red chilli or 1 fresh red chilli
  • Generous handful of flat-leaf parsley leaves, 4-5 tbsp olive oil, 1 lemon.


  1. Put a large pan of water on to boil for the pasta
  2. When boiling vigorously, add 1 teaspoon of salt and the pasta
  3. Boil hard until al dente (I follow the recommended timing on pack and do a taste test)
  4. Meanwhile, finely chop the garlic and (if you have decided on the whole chilli option) slice the chilli into thin strips
  5. Coarsley chop the parsley
  6. Gently heat the olive oil for about 30 seconds and then stir in the garlic, chilli and swirl them around your pan for about 15 seconds (don’t let the garlic go brown)
  7. Stir in the prawns and continue stirring for slightly less than a minute
  8. Remove the pan from the heat, squeeze in the juice from the lemon, add the parsley, and season slightly with sale and generously with pepper
  9. Drain the pasta and stir into the pan
  10. Add a final splash of olive oil and toss thoroughly.
