Recipe: Pumpkin with Red Peppers


  • Pumpkin,
  • red and green peppers
  • olive oil
  • sea salt and pepper


  1. Peel and slice your favourite pumpkin into serving sized pieces.
  2. Place in a shallow ovenproof dish with some olive oil, pepper and salt.
  3. Bake uncovered in a moderate oven for 30 minutes or until almost tender, then scatter sliced red peppers (or green, or both) over the pumpkin.
  4. Bake another 10 minutes or until pumpkin is tender.
  5. Serve with any meats.
