Recipe: Tomato and Basil Bruschetta
- 1 loaf of french bread, makes 24 pieces
- 4 garlic cloves
- ¼ cup basil
- 2 lbs. seeded tomatoes, diced
- 6 tbsp. olive oil
- Heat oven to 375°.
- Cut bread into 4 inch long pieces. Brush pieces of bread with olive oil. Toast in oven for about 10 minutes or until golden brown.
- After toasting, rub garlic on the toast. Mix remaining olive oil and tomatoes and basil in bowl. Add salt & pepper to taste. Top each piece of toast with about tsp. of mixture.
- Place on dish and serve.
