Vegetable Soup (Santa Maria)

Recipe: Vegetable Soup (Santa Maria)

Ingredients:

  • 2 tb Oil
  • 1 md Onion, sliced
  • 3 c Chopped mixed vegetables
  • 2 ts Salt
  • 1/2 ts Black pepper
  • 2 tb Soy sauce
  • 1 l Water
  • 1 bn Watercress cleaned & chopped

Instructions:

  1. Heat oil in a soup pot & stir fry onion for 1 minute. Add vegetables, salt, pepper & soy sauce. Fry together for 2 minutes.
  2. Add water & bring to a boil. Simmer till the vegetables are tender. Add watercress & serve.

Number of servings (yield): 4
