Orange-Raisin Carrots

Recipe: Orange-Raisin Carrots


  • 1 lb Carrots; peeled and sliced
  • 3/4 c Water
  • 1/2 ts Salt
  • 2 tb Cornstarch
  • 1 c Orange juice
  • 1/2 c Raisins
  • 1 tb Sugar


  1. Combine carrots, wate, and salt in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 6 to 8 minutes or until coarrots are crisp-tender.
  2. Dissolve cornstarch in orange juice; stir into carrot mixture. Stir in raisins and sugar. Cook over medium heat, stirring constantly, until smooth and thickened.
