Recipe: Plantains In Coconut Milk

Ingredients:

  • 4 ea Plantains, peeled & sliced
  • 1/4 ts Salt
  • 1 ts Curry powder
  • 1/2 ts Cinnamon
  • 1/8 ts Cloves
  • 1 1/2 c Coconut milk

Instructions:

  1. Combine all ingredients except coconut milk in a heavy pot. Pour in 1 c coconut milk & simmer over a low heat until the plantain is tender & milk is absorbed.
  2. Add more mil if necessary. Serve hot.
