Strawberry apple free-form tarts

Recipe: Strawberry apple free-form tarts


  • 1 sheet frozen shortcrust pastry, partially thawed
  • 200g can pie apple
  • 1/2 cup caster sugar
  • 1/4 cup almond meal
  • 8 strawberries, hulled, thinly sliced
  • double cream, to serve


  1. Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Using a 12cm round cutter, cut 4 rounds from pastry. Place rounds on prepared tray.
  2. Combine apple, sugar and almond meal in a bowl. Spoon mixture over pastry rounds, leaving a 1cm border. Top with strawberries. Fold up pastry border to contain filling. Bake for 20 to 25 minutes or until pastry is golden. Serve with cream.
