Artichoke, tomato & rocket salad

Recipe: Artichoke and bean dip


  • 170g jar 97% fat-free marinated artichokes, drained
  • 400g can cannellini beans, drained, rinsed
  • 2 garlic cloves, chopped
  • 1/3 cup lemon juice
  • Vegetable sticks, to serve


  1. Process artichokes, beans, garlic and lemon juice until smooth.
  2. Spoon into a bowl.
  3. Serve with vegetable sticks.
