Recipe: Artichoke, tomato & rocket salad
- 1 x 400g can artichoke hearts, drained, cut into quarters
- 80g 97 per cent fat-free semi-dried tomatoes, thinly sliced
- 1 x 80g pkt baby rocket leaves
- 1 tbs olive oil
- Salt & freshly ground black pepper
- Combine the artichoke, tomato and rocket in a large bowl.
- Drizzle with oil and gently toss until combined. Season with salt and pepper, and serve immediately.
