Recipe: Artichoke, tomato & rocket salad

Ingredients

  • 1 x 400g can artichoke hearts, drained, cut into quarters
  • 80g 97 per cent fat-free semi-dried tomatoes, thinly sliced
  • 1 x 80g pkt baby rocket leaves
  • 1 tbs olive oil
  • Salt & freshly ground black pepper

Instructions

  1. Combine the artichoke, tomato and rocket in a large bowl.
  2. Drizzle with oil and gently toss until combined. Season with salt and pepper, and serve immediately.
